Here is my Mom's (secret) recipe...
St. Patrick Day Cupcakes
1 3/4 cup flour1 box (4 serving) pistachio pudding (jello instant) *
3/4 cup chocolate chips
2/3 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 1/4 cup milk
1/2 cup oil
1/4 tsp vanilla
1 can cream cheese frosting (or flavor that you like)- you can also add green food coloring to the frosting - make it even more festive : )
- mix ingredients together
- put cupcake mix into baking pans
- bake at 375 degrees for 18-20 minutes
- let cool
- frost
- add green sprinkles and/or green m&m's to the top
(remember that they do have bags of ALL green m&m's -
I have only found them at CVS)
*you don't have to use the pistachio pudding, especially if you or someone
you love has a nut allergy. The pudding is to make the cupcakes green - you can just use
green food coloring which I do to add a bit more green.
